Beetroot salad with kidney beans, pickled cucumber and sauerkraut

This is a childhood favourite of mine. My mum used to make this during the holidays. It an amazing sweet and salty combination with a tangy zest from the picked cucumbers and cabbage. Super healthy with lots of vitamins and antioxidants. 

Ingredients: beetroots, potatoes, Carrots, Pickled cucumber, Sauerkraut and  Kidney beans.
